Main Dishes - Vegetarian

Red Pullav (India)

100 grams fresh green beans
100 grams green peas
100 grams carrots
2 potatoes
3 large onions
3 cloves garlic
5 hot peppers (or less if you prefer less spice)
1 inch of ginger root
1 Tbs. corriander
1 tsp. cumin
Chop and boil vegetables.
Grind spices with a little water to make a paste.
Chop the onion and sauté over a low flame until brown.
Add paste and fry on low flame for about 3 minutes, until the smell of spices fills the room.
Add vegetables, fry for several more minutes, then add cooked rice and stir until evenly mixed. Salt to taste.

Spinach & Eggs

Serves 2
Cook 1 package of spinach (frozen box) as directed.
In frying pan, sauté 1 chopped onion in a little olive oil.
Add salt, pepper, and 1/2-1 tsp. curry powder
Simmer 1 minute longer.
Add drained, cooked spinach.
Make four holes in spinach.
Crack 1 egg in each hole. Salt & pepper egg.
Cover and simmer until egg is done.
Serve with pita bread and plain yogurt cucumber salad.
